The Pinnacle Shiraz

Dalwhinnie The Pinnacle Shiraz is made from an ancient Barossa clone of Shiraz (BURV-12) known for its powerful flavours. The vines grow in a unique amphitheatre with its own mesoclimate.
Surrounded and sheltered by the highest Pyrenees range at 595 metres above sea level this contoured basin of vines is a world unto itself. It lies in a naturally undulating trough which falls away from the hills.
The grapes are handpicked at optimum ripeness. Most are destemmed to whole berries, with a portion left as whole bunches, and placed in a five tonne temperature controlled open fermenter.
After extended maceration the wine is pressed in a large airbag press and pumped straight to barrel for malolactic fermentation. It matures in one third new French oak for 18 months before bottling.
Deep dark purple, Dalwhinnie The Pinnacle Shiraz has cherry fruit intensity supported by spicy oak, ripe mature tannins and a persistent finish. Cellaring potential is 12 years.
